Aurelio doesn't chase trends or rush harvests. He trusts the rhythms his grandfather taught him—waiting for cherries to reach peak ripeness, even when it means smaller yields.

"The mountain knows better than I do," he says. "My job is to listen."

The Cuchumatanes are Guatemala's highest non-volcanic mountain range. At this altitude, coffee cherries develop slowly—building complexity and sweetness that can't be rushed.

Cold nights preserve acidity. Warm days build sugars. The result is a cup with remarkable clarity and depth.

Coffee isn't just what we grow—it's how we live. Every tree on this farm has a story. Some were planted by my grandfather. Some I planted with my children. They'll still be producing long after I'm gone.

Red Apple, Milk Chocolate

With almond cream finish

The first sip brings bright red apple acidity, rounded by rich milk chocolate. As it cools, notes of almond cream and raw sugar emerge—a finish that invites another cup.

Best brewed as pour-over or drip to highlight its clarity, though it also excels in milk drinks.
