Water just off the boil. Pour slowly and evenly, about three minutes total.

Let it cool a little. The fruit notes open up as it does.

In Kirundi, ntwari means courage, and leadership too. This coffee is named for a woman who found both.
In Burundi, taking on a coffee farm as a widow is no small thing. Women often can't own the land they work, and the business side of coffee has long belonged to men. After her husband passed, she kept going anyway. She joined other women farmers learning to grow specialty coffee through JNP Coffee, where she first met Jeanine Niyonzima-Aroian. Over the years, she found her voice in an industry that rarely made room for it.
Now she's the one making room. As her coffee business grows, she's bringing young women along with her and passing on what she's learned.
Her farm sits in Muyinga, in Burundi's northeast, at nearly 1,700 meters. The coffee is Bourbon, and it's processed by a women-owned wet mill. As a natural, it dries inside the whole cherry, which draws the fruit forward and gives the cup a soft, creamy body.
It's bright and gentle at once, a fitting cup for a name that means courage.
