How to Brew

A Natural-Process Pairing

Processing is one of the clearest places to taste human decision-making in coffee.

We return to this often because it’s basic and still easy to forget: coffee starts as a fruit. After it’s picked, the seed has to be separated from that fruit and dried. In washed coffee, the fruit is removed early, often leading to a cleaner, brighter cup. In natural coffee, the coffee dries inside the whole cherry, which can bring more fruit, body, and intensity.

Honey process sits between the two. The skin is removed, but some of the sticky fruit layer, called mucilage, stays on the seed as it dries. Rather than literally making the coffee taste like honey, that remaining layer affects how the coffee dries and ferments, shaping the cup’s sweetness, texture, and acidity.

The balance depends on how much mucilage stays on, how slowly the coffee dries, and how carefully the process is managed. That’s why honey-processed coffees can still taste so different from one another.

The two coffees in this Volume show how wide that range can be. Aquiares Estate in Costa Rica brings strawberry, rhubarb, guava, and pie-crust sweetness. Los Pirineos in El Salvador is bright and bakery-sweet too, but in a different key: peach tea cookie, lemon, and orange blossom honey.

Together, they show how processing can shape flavor without erasing where a coffee comes from.
