How to Brew

In Ethiopia's Guji Zone, coffee farming often looks different from the large, densely planted estates found elsewhere in the world. Farmers tend small plots, growing coffee alongside food crops and beneath the shade of other trees. Harvests are modest, and a great coffee can be the combined work of dozens of families.
That's the kind of coffee Ture Waji and his brother Assefa have built their business around. They founded Sookoo Coffee in 2018, working with smallholder farmers across the region to bring their harvests together.
In 2022, Sookoo opened the Sawana drying station, which now buys cherries from around 30 farmers in Bookkissa and neighboring communities. It's where this coffee begins its natural processing, drying inside the whole cherry rather than having the fruit removed first.
Natural processing can bring out big fruit flavors and sweetness, and this coffee has plenty of both. Strawberry and peach are especially juicy, while vanilla and sweet cream give it a softer, almost cupcake-like quality.
